Marinate the Chicken

In a bowl, mix soy sauce, calamansi juice, minced garlic, brown sugar, black pepper, and vegetable oil. Marinate the half chicken in this mixture for at least 2 hours, preferably overnight.

Grill the Chicken

Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for about 30-40 minutes, turning occasionally, until fully cooked and juices run clear.

Prepare the Fried Rice

In a large skillet, heat vegetable oil over medium heat. Add minced garlic and sauté until golden brown. Stir in cooked jasmine rice and salt, mixing well. Cook for about 5-7 minutes, then add chopped green onions before serving.

For the Pineapple Salsa

Make the Salsa

In a bowl, combine diced pineapple, red onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for about 10 minutes to allow flavors to meld.
