Marinate the Fish

Prepare the Marinade

In a bowl, combine miso paste, sake, and brown sugar. Mix well until smooth.

Marinate the Cod

Place the black cod fillets in the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cook the Bok Choy

Sauté Bok Choy

In a large skillet, heat sesame oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add bok choy and stir-fry for about 5-7 minutes until tender but still vibrant.

Fry the Wontons

Prepare Wontons

Heat vegetable oil in a deep pan over medium-high heat. Carefully place wonton wrappers in the hot oil and fry until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

Make the Beurre Blanc

Prepare the Sauce

In a saucepan, combine rice wine vinegar and shallots. Simmer until reduced by half, then reduce heat and whisk in cold butter, one cube at a time, until the sauce is smooth and emulsified.

Cook the Fish

Cook the Black Cod

Preheat the oven to 375°F (190°C). Place the marinated black cod on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the fish is flaky and cooked through.

Serve

Plating

On each plate, place a portion of sautéed bok choy, top with the baked black cod, drizzle with rice wine beurre blanc, and garnish with crispy wontons.
