Method
Prepare the stuffing
Add the short-grain rice to the pan and stir for 2–3 minutes so grains are coated and slightly toasted. Stir frequently to avoid browning.
Stir in the diced tomatoes, dried mint, salt, black pepper, and allspice (if using). Cook for 2 minutes to combine flavors.
Add 1 cup water or vegetable broth, bring to a gentle simmer, then reduce heat to low and cover. Cook for 10 minutes — rice should be partially cooked but still slightly firm (it will finish cooking inside the grape leaves). Remove from heat and let cool 10 minutes.
Once warm (not hot), fold in the chopped parsley. Taste and adjust seasoning — add more salt or pepper if needed. Stir in 1 tablespoon of the pomegranate molasses into the stuffing for a balanced sweet-tart note (reserve remaining molasses for braising and finishing).
Prepare grape leaves and assemble
If leaves are tightly packed, separate them carefully. Rinse each leaf under cold water to remove brine, then pat dry. Trim any thick stem nub so the leaf lies flat.
Lay one grape leaf, shiny side down, on a work surface. Place about 1 to 1 1/2 tablespoons of stuffing near the stem end, centered. Fold the bottom edge over the filling, fold the two sides in, then roll tightly toward the tip to form a neat cylinder. Repeat until filling is used (you should get about 25–30 rolls depending on leaf size).
As you roll, place finished dolmas seam-side down in a single layer in a heavy-bottomed pot (or arrange snugly in concentric circles).
Layering and braising
Mix the remaining 2 tbs pomegranate molasses with 2 cups water (or enough to come about 3/4 up the sides of the rolls). Pour the mixture into the pot carefully so it doesn’t unroll the leaves. Place a heatproof plate (upside down) on top of the rolls to weigh them down and keep them from floating.
Bring the braising liquid to a gentle simmer over medium heat, then reduce heat to low. Cover and simmer gently for 40–45 minutes, or until rice is tender and leaves are fully cooked. Check occasionally to ensure gentle simmer — do not boil vigorously.
After cooking, remove pot from heat and let sit, covered, for 15 minutes to settle and finish steaming.
Finish and serve
Carefully remove the plate and transfer the dolmas to a serving platter. Drizzle any remaining pomegranate molasses (or 1 tsp extra per serving) over the top for a glossy tart finish. Sprinkle chopped parsley and pomegranate seeds for color and brightness.
Serve warm or at room temperature with lemon wedges on the side. These keep well refrigerated for 3–4 days; reheat gently or serve chilled.
