Beef & Grain Mix
Prepare burghul
Place the 1/2 cup fine burghul in a small bowl and add 1/2 cup cold water. Stir, cover, and let soak 10–15 minutes until softened but not mushy. Drain thoroughly in a fine sieve and press out excess water using the back of a spoon or clean kitchen towel. Set aside chilled.
Chill and trim beef
Keep the beef very cold: place in the freezer 10–15 minutes before working so it firms up (easier to finely chop). Trim any silver skin or excess fat. Cut beef into 1-inch cubes and then partially freeze on a tray until firm but not frozen solid (about 15–20 minutes).
Grind or finely mince beef
Using a very sharp knife, finely mince the beef into a paste-like texture, or pulse twice quickly in a clean, chilled food grinder/processor (use the blade sparingly — do not over-process into a paste). You want a smooth, silky, slightly grainy texture typical of kibbe nayeh. If using a grinder, return meat to the refrigerator until assembly.
Seasoning & Aromatics
Combine seasonings
In a chilled mixing bowl, combine the drained burghul, minced beef, chopped onion, mint, parsley, 1 tsp kammoune (or ground cumin mix), 1/4 tsp allspice, 1/8 tsp cinnamon, 1/2 tsp Aleppo pepper (or paprika), 1 tsp fine sea salt, and 1/2 tsp freshly ground black pepper. Mix with clean hands, pressing and kneading until the mixture becomes homogenous and slightly sticky — about 2–3 minutes. Taste a tiny bit (optional) for seasoning — because this is raw beef, ensure meat was handled and sourced very fresh.
Finishing & Garnish
Finish with oil and acid
Stir in 2 tbsp extra virgin olive oil and 1 tbsp fresh lemon juice. If using, add 1 tsp pomegranate molasses for a subtle sweet-tart layer. Adjust salt and pepper to taste. Mix gently but thoroughly so the oil is evenly distributed and the mixture becomes glossy.
Plate and garnish
Transfer kibbe nayeh to a chilled serving plate. Use the back of a spoon to shape into a round mound or spread into an even layer. Make small swirls on the surface and drizzle a little extra olive oil. Scatter toasted pine nuts and a few mint leaves on top. Serve immediately with thin pita slices or fresh pita. Offer additional lemon wedges and olive oil at the table.
Safety and storage
Consume immediately for best quality. If you must store, keep refrigerated in an airtight container for up to 24 hours and discard thereafter. Because this is raw beef, ensure meat is sushi- or tartare-grade and all utensils and work surfaces are sanitized.
