Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Do not boil vigorously. Once clear and slightly thickened (about 3–4 minutes after simmering), remove from heat.

While still warm, add the chosen flavoring to the syrup: stir in 1 tablespoon citrus zest (or 1 tablespoon fresh citrus juice if you prefer a brighter, less zesty character), 1 teaspoon grated fresh ginger for ginger soda, 1 teaspoon vanilla extract for cream soda, and/or 2 teaspoons concentrated fruit puree or syrup for fruit-forward sodas. Let the syrup steep for 10–20 minutes to extract the flavors.

After steeping, strain the syrup through a fine-mesh sieve or cheesecloth into a clean bowl to remove solids (zest, ginger). Cool the syrup to room temperature, then chill in the refrigerator until cold (at least 30 minutes).

Combine syrup and carbonated water
For each 12-ounce (about 1.5 cup) serving of soda, add 2 tablespoons of the chilled flavored simple syrup to the bottle (this recipe yields roughly 14–16 tablespoons of syrup; adjust to taste). Carefully pour 1.5 cups (12 fl oz) cold carbonated water into the bottle over the back of a spoon to reduce foaming. For the batch-size given (6 cups carbonated water), combine 6 cups cold carbonated water with 8–10 tablespoons flavored syrup in a large pitcher or bottle, gently stirring to mix. Taste and adjust sweetness or flavor: add more syrup 1 teaspoon at a time if needed.

If you used concentrated fruit puree or thick flavorings, dilute them into a small amount of chilled carbonated water first to avoid sinking and then mix into the rest.
