Prep
Bring two large eggs to room temperature for 5–10 minutes if stored cold. This helps them cook more evenly.
Crack the eggs into a small bowl or ramekin separately to check for shells and quality.
Cooking (Fried — Sunny Side or Over Easy)
Heat the pan
Place a nonstick or well-seasoned skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt and foam but not brown (about 30–45 seconds). If using oil, use 1 teaspoon oil with 1/2 tablespoon butter to raise the smoke point.
Cook for over-easy (optional)
For over-easy: when whites are mostly set (about 2 minutes), carefully loosen edges with a spatula and gently flip each egg. Cook 15–30 seconds more for a very runny yolk, 30–45 seconds for slightly set yolk.
