Method
Honey-ginger syrup (prepare ahead)
Add 2 tablespoons sliced fresh ginger to the warm syrup, allow to steep for 10–15 minutes for a pronounced ginger note, then strain out the ginger. Cool to room temperature before using. Refrigerate leftover syrup for up to 2 weeks.
Assembly
Chill a highball or Collins glass by filling it with ice and setting aside for 1–2 minutes, then discard the chilling ice.
Fill the chilled glass with fresh ice (about 1 cup).
Measure and pour 2 oz Bombay Sapphire East Gin over the ice.
Add 0.5 oz fresh lime juice and 0.25 oz honey-ginger syrup to the glass.
Add 2 dashes of Angostura bitters.
Gently stir 6–8 times with a bar spoon to integrate the ingredients without flattening the tonic.
Top slowly with 4 oz AC Small Batch Tonic poured over the back of a spoon or down the side of the glass to preserve carbonation.
Give one gentle stir to marry the tonic and spirit (1–2 revolutions).
Garnish with 1 lime wheel on the rim and a thin slice of fresh ginger dropped into the drink for aroma.
Serve immediately with a short straw (optional).
