Prep and display

Remove meats and cheeses from refrigeration 20–30 minutes before service to reach ideal serving temperature. Arrange sliced meats in overlapping rows on a chilled serving tray. Place cheeses on a separate board: slice semi-firm cheeses (Gouda, Swiss) into 1/4-inch slices, leave soft cheeses (Brie) in whole wedges. Add small bowls of cornichons and mixed olives near the meats/cheeses. Label each item with small tent cards if desired.

Provide separate utensils (cheese knives, tongs) for each cheese and meat to avoid cross-contamination. Replenish trays once portions run low.

Pastry handling

Arrange fresh pastries on serving platters in single layers to avoid crushing. If pastries were refrigerated or frozen, warm for 5–7 minutes at 350°F (175°C) in a rack oven or warming drawer right before service to refresh flakiness; do not overheat. Cover lightly with a clean linen to retain warmth for short periods.

Bread & spreads

Slice artisan loaves (if not pre-sliced) into 1/2-inch slices. Place butter in a bowl or pre-portion into individual pats/tubs. Put jams in small serving bowls with spreaders. Keep bread near toaster station but separate from pastry heat sources. Replenish butter and jam as needed.

Waffles

Keep Belgian waffles in a warmer or heat them in a toaster/oven according to manufacturer instructions until hot and crisp (usually 3–5 minutes for frozen, 2–3 minutes for fresh). Place a sign indicating they are hot and provide tongs for customers to remove waffles safely. Dust with powdered sugar lightly at the station and place maple syrup nearby.

Toast

Provide a multi-slice toaster or conveyor toaster. Lay out bread slices in baskets next to the toaster. Offer butter, cream cheese, and jams as spreads. Put a small bowl of powdered sugar and extra maple syrup nearby in case guests want waffles with different toppings.

Yogurt & toppings

Yogurt setup

Place plain Greek and vanilla yogurt in chill trays or on ice to keep below 41°F (5°C). Use ladles or serving spoons and label each yogurt type. Keep serving utensils clean and replace them frequently.

Toppings

Put granola, honey (in squeeze bottle or small bowl), fresh berries, and sliced banana in separate bowls with small spoons. Arrange toppings so guests can build parfaits. Replenish fruit and granola often to maintain a fresh appearance.

Fresh fruit & extras

Whole fruit

Arrange whole seasonal fruit in baskets for grab-and-go. Keep fruit rotated and remove any blemished pieces. Wash fruit thoroughly before display and dry with clean towels.

Fruit salad and spreads

Keep fruit salad chilled in a covered bowl on ice. Provide serving spoons and small bowls for guests. Place butter pats and cream cheese tubs near the bread/toast area for easy access.

Condiments & serving items

Set out napkins, plates, bowls, tongs, spoons, and small serving utensils at accessible points across the buffet to avoid crowding. Provide tent cards labeling allergens where applicable (milk, wheat, nuts if present). Keep lemon wedges in a small bowl near fruit and cheese; offer salt and pepper at a condiment station. Monitor and restock all condiments and utensils during service.
