Method

Crust Preparation

1

Prepare the Crust

Preheat your oven to 350°F (175°C). In a bowl, combine chopped hazelnuts, melted butter, sugar, and salt. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for 10 minutes, then remove from the oven and allow it to cool.

Cheesecake Filling Preparation

2

Make Cheesecake Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Add sour cream and sugar, and continue to beat until fully combined. Add the eggs one at a time, mixing well after each addition. Finally, mix in lemon juice and zest. Pour the filling over the cooled crust.

3

Bake the Cheesecake

Reduce the oven temperature to 325°F (160°C) and bake the cheesecake for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

Cherry Compote Preparation

4

Prepare Cherry Compote

In a saucepan over medium heat, combine the pitted cherries, sugar, and lemon juice. Cook for about 10-15 minutes, stirring occasionally, until the cherries are soft and the mixture has thickened slightly. Remove from heat and allow to cool.

Assembly

5

Assemble the Cheesecake

Once the cheesecake has cooled completely, remove it from the springform pan. Top with the cherry compote before serving.
