Prepare the Salsa Verde

Making the Salsa Verde

In a food processor, combine parsley, basil, capers, garlic, lemon juice, and olive oil. Pulse until smooth and season with salt to taste. Set aside.

Prepare the Aioli

Making the Aioli

In a small bowl, mix mayonnaise, minced garlic, lemon juice, and salt. Stir well and set aside.

Prepare the Fries

Cooking the Thick Fries

Peel and cut the russet potatoes into thick fries. Rinse under cold water and pat dry. In a large pot, heat canola oil over medium-high heat. Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Cook the Halibut

Frying the Halibut

Season the halibut fillets with salt and pepper. Dredge each fillet in flour, shaking off excess. In a large skillet, heat canola oil over medium-high heat. Fry the halibut for about 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
