Prepare the Lamb Ribs

Preheat the oven to 300°F (150°C). In a bowl, mix all the spices (paprika, cumin, cinnamon, salt, black pepper, and cayenne pepper). Rub the spice mixture evenly over the lamb ribs.

Bake the Lamb Ribs

Place the seasoned ribs on a baking sheet lined with parchment paper. Cover with aluminum foil and bake for 2 hours. Remove the foil and increase the temperature to 400°F (200°C) for an additional 30 minutes to crisp the ribs.

Chermoula Sauce

Make the Chermoula

In a blender or food processor, combine the parsley, cilantro, garlic, lemon juice, olive oil, salt, and cumin. Blend until smooth. Adjust seasoning to taste.

Salad Assembly

Prepare the Salad

In a bowl, combine the diced cucumber, sliced red onion, and sliced radish. Toss together and set aside.

Serve

Once the ribs are crispy, serve on a platter with the chermoula sauce drizzled over the top. Serve the cucumber salad on the side.
