Winemaking Process
1. Harvesting
Harvest the Xinomavro grapes during the peak ripeness, usually in late September to early October.
2. Crushing
Crush the grapes to release the juice and begin the fermentation process.
3. Fermentation
Add the sulfur dioxide and yeast to the crushed grapes and let the mixture ferment for about 10-14 days.
4. Pressing
After fermentation, press the mixture to separate the juice from the skins and seeds.
5. Aging
Transfer the wine to oak barrels and let it age for at least 12 months to develop its flavors.
6. Bottling
After aging, filter and bottle the wine, allowing it to further mature in the bottle before release.
