Cut the pork shoulder and beef chuck into small chunks. Pass them through a meat grinder fitted with a medium-hole plate. Repeat this step until all meat is ground.

In a large bowl, combine the ground meat with minced garlic, salt, black pepper, nutmeg, coriander, and chopped parsley. Mix well.

Slowly mix in the ice water until the mixture is well combined and slightly sticky.

Prepare the Casings

Soak the hog casings in water for about 30 minutes, then rinse thoroughly to remove excess salt.

Using a sausage stuffer, carefully stuff the sausage mixture into the prepared hog casings, being careful not to overfill.

Twist the sausages into 6-inch links and tie off the ends with kitchen twine.
