Prepare and measure all fillings. Dice peppers, onion, tomato; slice mushrooms; chop spinach; crumble or shred cheeses; chop any cooked protein. Keep each filling in small bowls so assembling is quick.

Crack eggs into a medium bowl, add milk, salt, and pepper. Whisk vigorously until yolks and whites are fully combined and mixture is slightly frothy (about 20–30 seconds). This produces a tender, slightly fluffy omelet.

Cook vegetable and protein fillings

Sauté aromatics

Heat a nonstick 8-10 inch skillet over medium heat. Add 1 teaspoon of butter or a small drizzle of oil. Add diced onion and bell pepper; sauté 2–3 minutes until softened and translucent.

Add mushrooms and cook another 2 minutes until they release moisture. Add spinach and cook until wilted, about 30–45 seconds. If using tomatoes, add them last and cook 30 seconds just to warm — tomatoes release water, so use sparingly.

If using pre-cooked proteins (ham, bacon, smoked salmon), fold them into the vegetables just to warm (30–60 seconds). Transfer cooked fillings to a plate and wipe pan clean with a paper towel. Keeping fillings slightly warm helps finish the omelet without steaming it.

Cook the omelet

Return skillet to medium-low heat and add remaining 1 tablespoon butter. Swirl to coat and let butter foam but not brown.

Pour the beaten eggs into the pan and immediately tilt the pan to distribute the egg evenly. Let eggs set undisturbed for 10–15 seconds until edges begin to set.

Using a silicone spatula, gently pull the set edges toward the center while tilting the pan so the still-runny egg flows to the edges. Repeat 2–3 times, creating soft curds. This should take about 30–45 seconds.

When the top is mostly set but still a slight sheen of uncooked egg remains (surface still slightly glossy), sprinkle the warm fillings evenly over one half of the omelet. Top with shredded cheddar and/or crumbled goat cheese.

Use the spatula to carefully fold the empty half over the filled half, creating a half-moon. Let cook 20–30 seconds more for cheese to melt and internal temperature to even out. For a more cooked interior, cover pan briefly (10–15 seconds) and remove.

Slide the omelet onto a plate seam-side down and garnish with chopped chives and additional black pepper to taste.

Serve

Serve immediately with toast, salad, or roasted potatoes. If making multiple omelets, keep finished omelets on a warm plate in a 175°F (80°C) oven for up to 10 minutes while you cook the next batch.
