Preheat and prepare
Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat. If you prefer extra crispness, place a cooling rack on the sheet and very lightly oil the rack (about 1 tsp neutral oil) so fries crisp on all sides.
Wash and cut sweet potatoes
Wash and peel (optional) enough sweet potato to yield about 2 cups of fries. Cut into even sticks roughly 1/4 to 1/2 inch thick and about 2–3 inches long. Try to keep sizes consistent so they cook evenly.
Par-cook (optional but recommended for crispness)
Place cut fries in a large bowl of cold water and soak for 20–30 minutes to remove excess starch. Drain and pat completely dry with clean kitchen towels or paper towels. Drying well is crucial for crisp fries.
Coat fries
Return dried fries to a dry bowl. Sprinkle 1 tablespoon cornstarch over the fries and toss to coat evenly. Add 2 tablespoons olive oil and toss until each fry has a light coating. Then add 1 teaspoon sea salt, 1 teaspoon black pepper, 1 teaspoon smoked paprika, and 1 teaspoon garlic powder. Toss well to distribute seasonings evenly.
Arrange on baking sheet
Spread the fries in a single layer on the prepared baking sheet (or on the oiled cooling rack) with space between pieces. Overcrowding will cause steaming instead of crisping; use two sheets if needed.
Bake
Bake in the preheated oven for 12 minutes. Remove the sheet and flip or shake the fries to promote even browning. Return to oven and bake for an additional 10–15 minutes until edges are browned and crisp to your liking. Total bake time will be about 22–27 minutes depending on thickness and oven.
Finish and serve
Remove fries from the oven and immediately season with a light extra pinch of salt if desired. Sprinkle chopped fresh parsley (1 tablespoon) over the fries for color and fresh flavor. Serve hot as a side order.
