Fresh & vibrant with passionfruit, gooseberry and some melon characters.

If using whole passionfruit, cut in half and scoop pulp into a small bowl. Strain lightly if you prefer fewer seeds. Dice honeydew melon into approximately 1/2-inch pieces and place in a separate bowl.

Prep passionfruit and melon

Wash gooseberries (or halved green grapes) and pat dry. Halve gooseberries lengthwise. Zest the lime, then juice it and set both aside.

Prepare gooseberries and lime

Lightly bruise two of the mint sprigs by clapping between your palms to release aroma; reserve the remaining sprigs for glass garnish.

In a large pitcher (about 1.5–2 L), add the passionfruit pulp, diced melon, halved gooseberries, lime juice and lime zest. Add the simple syrup or honey syrup (start with 2 tsp) and gently stir to combine. Taste and add another teaspoon of syrup if you prefer a slightly sweeter profile — Sauvignon Blanc is typically crisp, so keep sweetness restrained.

Combine fruit and optional sweetener

Pour the chilled bottle of Neptune Point Sauvignon Blanc into the pitcher with the fruit. Gently stir to combine so the fruit flavors permeate the wine. Refrigerate the assembled pitcher for 20–30 minutes to let flavors meld. If short on time, let rest for at least 10 minutes.

Add wine and chill

Add ice to the pitcher just before serving (or fill individual glasses with ice). Stir once more. Ladle or pour the wine and fruit into four chilled white wine glasses or stemless glasses, distributing fruit pieces evenly.

Add ice and serve

Top each glass with a mint sprig and, if desired, a slice of lime or a half passionfruit shell for presentation.

Garnish

Serve immediately after garnishing. This preparation highlights the Neptune Point Sauvignon Blanc's passionfruit, gooseberry and melon characters. For a longer-lasting pitcher (avoid diluting the wine), place fruit and wine in the fridge and add ice to individual glasses when serving.

To make a single serving instead of a pitcher: use 150 ml (about 5 fl oz) Sauvignon Blanc, 1/2 tbs passionfruit pulp, 2–3 halved gooseberries, 2 tbs diced melon, 1/2 tsp simple syrup, and a squeeze of lime; assemble in a glass and garnish as above.
