Muddle

Place 6 fresh raspberries and 0.5 oz simple syrup in the bottom of a cocktail shaker. Use a muddler to press the raspberries until they release their juices and you have a jammy mixture with no large unbroken berries.

Add liquids

Add 2 oz Gordon's gin, 0.75 oz fresh lemon juice, 1 oz pink grapefruit juice and 0.5 egg white (if using) into the shaker with the muddled raspberries.

Dry shake

Seal the shaker and shake vigorously without ice for 10–15 seconds to emulsify the egg white and integrate the fruit, producing a foamy texture.

Wet shake

Open the shaker, add 1 cup of ice, reseal and shake hard for 12–15 seconds until the outside of the shaker is very cold (this chills and dilutes the cocktail properly).

Double strain

Using a Hawthorne or julep strainer and a fine-mesh strainer, pour the cocktail into a chilled coupe or martini glass, straining out solids and raspberry seeds for a smooth, pale pink drink.

Garnish and serve

Thread one fresh raspberry onto a cocktail pick and rest over the rim or float in the center; add a thin lemon wheel or twist on the rim. Serve immediately.
