Mussels and Broth

Toast

Method

Preparation

1

Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Remove any beards from the mussels.

2

Cook the Sausage

In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks until browned, about 5-7 minutes.

3

Make the Broth

Add minced garlic and cook for an additional 1-2 minutes until fragrant. Stir in chicken broth, lemon juice, and harissa paste. Bring to a simmer.

4

Add Mussels

Add the cleaned mussels to the pot, cover, and cook for about 5-8 minutes or until all mussels have opened.

5

Prepare the Tomatoes

In a separate pan, blister the cherry tomatoes over high heat with a drizzle of olive oil until they burst and char slightly.

Toast Preparation

6

Toast the Ciabatta

Slice the ciabatta loaf in half and spread butter on each side. Toast in a skillet or under a broiler until golden brown.

Serving

7

Serve the Dish

Place the cooked mussels in bowls, ladle the broth over them, top with blistered tomatoes, and serve with toasted garlic ciabatta on the side.
