Dough Preparation
Activate Yeast
In a small bowl, dissolve yeast in warm milk with a teaspoon of sugar. Let it sit for about 5 minutes until frothy.
Mix Ingredients
In a large mixing bowl, combine flour, sugar, salt, eggs, melted butter, and vanilla extract. Add the yeast mixture.
Knead Dough
Knead the dough on a floured surface for about 10 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 1 hour.
Filling Preparation
Mix Filling
In a separate bowl, blend cream cheese, sugar, vanilla extract, egg yolk, and lemon zest until smooth and creamy.
Assembly and Baking
Shape the Dough
After the dough has risen, roll it out on a floured surface to about 1/4 inch thickness. Cut into squares.
Add Filling
Place a spoonful of the cream cheese filling in the center of each square. Fold the corners over the filling to create a pocket.
Bake
Place on a baking sheet lined with parchment paper and let rise for another 20 minutes. Preheat the oven to 375°F (190°C) and bake for 20-25 minutes until golden.
