In a small saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar is completely dissolved. Remove from heat and let it cool.

Make the Lemon Syrup

While the syrup is cooling, cut the fresh lemons in half and juice them until you have about 1 cup of fresh lemon juice. Strain the juice to remove seeds and pulp.

Juice the Lemons

In a large pitcher, combine the cooled lemon syrup, fresh lemon juice, and fresh mint leaves. Muddle the mint leaves gently with a muddler or the back of a spoon to release their flavor.

Combine Ingredients

Slowly pour in the club soda to the pitcher. Stir gently to combine, being careful not to lose the carbonation.

Add Club Soda

Fill glasses with ice cubes and pour the lemon-mint mixture over the ice. Garnish each glass with a lemon slice and a sprig of mint.
