Rinse the turnip greens thoroughly under cold running water to remove grit. Trim and discard any very tough stems; roughly chop the leaves into 1- to 2-inch pieces.

Bring a large pot of water (about 6 cups) to a rolling boil. Add a generous pinch of salt if desired.

Blanch the chopped greens in the boiling water for 2 minutes to soften and remove some bitterness.

Prepare an ice bath (about 2 cups ice with cold water). Remove the greens from the boiling water using tongs or a slotted spoon and plunge immediately into the ice bath to stop the cooking. Drain thoroughly and squeeze out excess water; set aside.

Flavor Base

In a large skillet or Dutch oven, heat the olive oil and butter over medium heat until the butter has melted and foams slightly.

If using bacon or pancetta, add the diced pieces now and cook, stirring occasionally, until they render fat and become lightly crisp, about 5–7 minutes. Remove and set aside on a paper towel, leaving the fat in the pan.

Add the finely diced onion to the pan and cook over medium heat until soft and translucent, about 6–8 minutes. Stir occasionally to prevent browning.

Add the minced garlic and cook for 30–45 seconds until fragrant, taking care not to burn it.

Seasoning & Finish

Add the blanched and drained turnip greens to the pan, pressing them down to fit. Pour in the cup of broth to help steam and deglaze the pan.

Season with kosher salt, black pepper, red pepper flakes (if using), and the teaspoon of sugar if you want to balance bitterness. Stir to combine.

Cover the pan and simmer over low to medium-low heat for 10–12 minutes, stirring once or twice, until the greens are tender and have absorbed most of the liquid.

Uncover, stir in the apple cider vinegar and lemon juice (if using), and cook for another 1–2 minutes to meld flavors. Taste and adjust seasoning with more salt, pepper, or a pinch of sugar as needed.

If you cooked bacon earlier, stir it back in now for texture and smoky flavor. Serve hot as a side dish or over grits, rice, or with cornbread.
