Make citrus-ginger syrup

Combine 0.5 cups granulated sugar and 0.5 cups water in a small saucepan. Add the orange zest and freshly grated ginger. Bring to a gentle simmer over medium heat, stirring until the sugar fully dissolves. Reduce heat and simmer 2–3 minutes to infuse flavors. Remove from heat and let steep 10 minutes.

Strain the syrup through a fine-mesh sieve into a heatproof bowl or jar, pressing on solids to extract flavor. Discard solids. Let syrup cool to room temperature (or chill briefly) before using.

Brew the spiced tea

Place 2 tea bags, 3 whole cloves and 1 star anise in a heatproof teapot or large heatproof measuring cup. Pour 2 cups boiling water over them. Steep 4–5 minutes for a strong infusion (longer will be bitter). Remove and discard tea bags and whole spices.

Taste the brewed tea; it should be bold but balanced. If it tastes too strong, allow to cool slightly and dilute with up to 2 tablespoons additional hot water.

Assemble the Senior Drink (single serving)

Fill a tall glass with 1 cup ice cubes. Add 2 tablespoons fresh lemon juice and 2 tablespoons fresh orange juice to the glass. Add 2–3 tablespoons of the cooled citrus-ginger syrup (adjust to taste for sweetness). Pour 3/4 cup of the brewed spiced black tea over the ice and juices, leaving room for sparkling water.

Stir gently to combine. Top with 1/4 cup (about) chilled sparkling water to add brightness and effervescence. Stir once more gently.

Add a pinch (about 1/4 tsp) of salt to enhance flavors and stir to dissolve. Taste and adjust: add more syrup for sweetness, more lemon for brightness, or more sparkling water for length.

Garnish with 1–2 thin orange slices and 4–6 fresh mint leaves if using. Serve immediately.
