Pancake Batter
Prepare dry ingredients
In a large mixing bowl, whisk together the all-purpose flour, lightly ground rolled oats, baking powder, baking soda, salt, and granulated sugar until evenly combined.
Mash banana
Peel one of the bananas and mash it in a small bowl until mostly smooth with a few small chunks remaining. This adds moisture, sweetness, and tenderness to the batter.
Combine wet ingredients
In a separate bowl, whisk the buttermilk, eggs, melted butter, and vanilla extract together until smooth. Stir the mashed banana into the wet mixture.
Make batter
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few small lumps are fine. Fold in half of the blueberries (about 1/2 cup). If batter seems very thick, add up to 2 tablespoons extra buttermilk to reach a pourable but thick consistency.

Preheat skillet
Heat a heavy skillet or griddle over medium heat until hot (about 5 minutes). Lightly grease with 1 tablespoon unsalted butter or a neutral oil and wipe off excess with a paper towel so there is just a thin film.
Cook pancakes
For each pancake, pour about 1/3 cup batter onto the skillet, spacing them to allow spreading. Top each pancake with a couple of banana slices and a few additional blueberries. Cook until the edges look set and bubbles form and start to pop on the surface, 2–3 minutes. Flip and cook the second side until golden and cooked through, 1.5–2 minutes more. Adjust heat as needed to avoid burning. Repeat with remaining batter, adding more butter to the skillet as necessary.
Keep warm
Transfer cooked pancakes to a baking sheet or plate and keep warm in a 200°F (95°C) oven while finishing the rest.

Warm maple syrup (optional)
Place the maple syrup in a small saucepan and warm gently over low heat for 2–3 minutes, or microwave in a microwave-safe bowl in 20-second bursts until warm. Warming helps the syrup soak into pancakes for easier eating, especially helpful for seniors with sensitive teeth.
Assemble
Stack pancakes 2–3 high on each plate. Spoon warm maple syrup over the stack. Add a dollop (about 1–2 tablespoons) of plain Greek yogurt or whipped cream if desired, and sprinkle with toasted chopped walnuts or pecans for texture. Dust lightly with powdered sugar and garnish with fresh mint if using.
Serve
