Prep and Cook Rutabagas

Peel the rutabagas with a sharp chef's knife or heavy-duty vegetable peeler; trim ends. Cut into roughly 1-inch cubes so they cook evenly. Place the cubes in a large pot and cover with cold water by about 1 inch.

Add 1/2 teaspoon of the salt to the pot. Bring to a boil over high heat, then reduce to a simmer. Cook until rutabaga cubes are very tender and easily pierced with a fork, about 20–30 minutes depending on size.

Drain and Steam-Dry

Drain the rutabagas in a colander. Return them to the still-warm pot and set the pot over low heat for 1–2 minutes, shaking occasionally, to evaporate excess moisture. This helps produce a richer, creamier purée.

Flavor Base

While rutabagas cook, melt 2 tablespoons of the butter in a small saucepan over medium-low heat. Add the minced garlic and cook gently until fragrant and soft but not browned, about 1 minute. Remove from heat.

Mash or Purée

Transfer the drained rutabagas to a food mill, potato ricer, or use an immersion blender in a wide bowl. Add the warm garlic butter, remaining 1 tablespoon butter, warm milk and cream. Purée or mash until smooth and creamy. If mixture seems too thick, add up to 2 tablespoons more milk or cream.

Season the purée with the remaining 1 teaspoon salt, freshly ground black pepper, and nutmeg (if using). Taste and adjust seasoning. Keep warm over very low heat, stirring occasionally, or cover and set aside.

Optional Brown Butter

If using brown butter, melt the extra tablespoon of butter in a small skillet over medium heat. Swirl occasionally until it foams and the milk solids turn golden-brown and smell nutty, 2–3 minutes. Remove from heat to stop browning.

Spoon the rutabaga purée into a warmed serving bowl or plates. Drizzle with the brown butter (or an extra pat of butter). Sprinkle the sliced chives (or parsley) and a light grating of lemon zest if desired.

Serve hot as a side dish. The recipe yields about 4 generous servings. Leftovers keep refrigerated in an airtight container for up to 3 days; reheat gently with a splash of milk or cream.
