Prepare workspace

Wash hands and rinse spinach, shredded carrots (if not pre-shredded), cucumber slices, and any fresh fruit or vegetables. Pat dry with a clean towel or paper towel.

Spread base

Lay one whole wheat tortilla flat on a clean surface. Evenly spread 1 tablespoon of softened cream cheese over the tortilla, leaving a 1/2-inch border along the edges to prevent overflow when rolling.

Layer fillings

Place two slices of turkey across the center of the tortilla, slightly overlapping. Sprinkle about 1/4 cup shredded cheddar cheese over the turkey. Add a small handful of baby spinach (about 1/4 cup), a tablespoon of shredded carrots, and a few thin cucumber slices in a line along the turkey.

Roll and secure

Starting from the edge closest to you, tightly roll the tortilla away from you, tucking in the fillings as you go. When rolled, press gently to seal. If desired, secure with one toothpick (for ages 6–12, supervise if using toothpicks).

Slice for kids

Using a sharp knife, cut the roll into 3–4 bite-sized pinwheels. Repeat steps for the remaining tortillas and ingredients to make 4 roll-ups total.

Serve with dip

Arrange roll-up pinwheels on a plate and add 1 teaspoon of honey mustard or mild ranch in a small ramekin for dipping (optional).

Prepare fruit and vegetables: core and slice the apple into kid-friendly wedges. If you want to prevent browning, toss the apple slices in a teaspoon of lemon juice diluted with 1 tablespoon of water.

Place 1/2 cup grape tomatoes or grapes and 1/2 cup baby carrots in a separate compartment or small bowl to keep them fresh and crunchy.

Add about 12 whole grain crackers to the plate as a light crunchy side that pairs well with the roll-ups and cheese.
