Prepare mixture
In a large bowl combine ground beef, finely chopped onion, minced garlic, egg, dry breadcrumbs, Worcestershire sauce, Dijon mustard, salt, and black pepper. Use your hands or a fork to mix gently until just combined — avoid overworking to keep steaks tender.
Form patties
Divide the mixture into four equal portions (about 4 oz each) for smaller servings or two portions for larger steaks. Shape each portion into a compact oval or round patty about 3/4-inch thick. Press a slight shallow indentation in the center of each patty to help them cook evenly.
Sear steaks
Heat a large skillet (cast-iron preferred) over medium-high heat. Add vegetable oil and let it shimmer. Place patties in the pan without crowding. Cook until a deep brown crust forms, about 3-4 minutes per side for medium (adjust time for thickness and desired doneness). Do not press down on the patties. Transfer seared patties to a plate and tent loosely with foil while you make the gravy.
Onion Gravy
Caramelize onions
In the same skillet set to medium heat, add the unsalted butter. Once melted, add the thinly sliced onion and a pinch of salt. Cook, stirring occasionally, until the onion softens and begins to brown, about 8-10 minutes. If the pan becomes too dry or browns too fast, lower the heat and add a tablespoon of water to deglaze.
Build gravy
Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a gentle simmer so it thickens. Stir in Worcestershire sauce, soy sauce, and brown sugar (if using). Taste and season with salt and freshly ground black pepper as needed. If the gravy is too thick, add up to 1/4 cup more broth or water to reach desired consistency.
Return steaks to pan
Nestle the seared hamburger steaks back into the gravy. Spoon some gravy over the tops, reduce heat to low, cover the skillet, and simmer gently for 3-5 minutes to finish cooking the steaks and meld flavors. This also ensures an internal temperature of about 160°F (71°C) for well-done; reduce time slightly for medium.
To Serve
Transfer hamburger steaks to plates or a serving platter and spoon generous amounts of onion gravy over each steak. Garnish with chopped fresh parsley if desired. Serve immediately with mashed potatoes or steamed rice and vegetables on the side.
