Prepare simple syrup (if not ready)

Combine equal parts sugar and water (for example 1/2 cup sugar and 1/2 cup water) in a small saucepan. Heat gently, stirring, until sugar dissolves. Cool to room temperature and refrigerate. Yield: ~1 cup.

Mix the cocktail

Fill a cocktail shaker halfway with ice (about 6 cubes). Add 2 oz gin, 0.75 oz fresh lemon juice and 0.75 oz simple syrup. Secure the lid and shake vigorously for 10–15 seconds until well chilled (shaker will frost).

Finish and serve

Strain the shaken mixture into a chilled highball or Collins glass filled with fresh ice. Top with 2 oz club soda and gently stir once to combine. Garnish with a lemon wheel or twist and a mint sprig if desired. Serve immediately.

Notes on balance

Adjust the simple syrup up or down 0.25 oz to taste depending on sweetness preference and the tartness of the lemon.

In a shaker or mixing glass filled with ice, combine 4 oz cold brewed tea (strong), 0.75 oz fresh lemon juice and 0.75 oz simple syrup. Shake or stir until chilled, about 8–10 seconds if shaking or 20–30 seconds if stirring.

Variations

For a fruitier version, add 0.5 oz raspberry or peach puree to either the cocktail or mocktail before shaking. If you prefer no fizz, omit the club soda and serve straight up in a coupe.
