Begin by hand-picking the Tempranillo grapes from the vineyard, ensuring only ripe and healthy berries are selected. Using a destemming tool, carefully remove the stems from each berry, ensuring to keep the berries intact.

Destemming the Grapes

Clean and sanitize the open top fermentation tank to ensure no unwanted bacteria contaminates the wine. Place the destemmed grapes into the fermentation tank.

Prepare Fermentation Tank

Allow the grapes to ferment in the open-top tank at a controlled temperature. Monitor the fermentation process using a hydrometer to check the sugar levels. This typically takes around 1-2 weeks.

Start Fermentation

Once fermentation is complete, carefully transfer the wine into oak barrels for aging. This will impart unique flavors and aromas to the wine.

Transfer to Oak Barrels

Allow the wine to age in the oak barrels for a minimum of 12 months. Regularly taste the wine to determine the optimal aging period.

Aging Period

After the aging process, carefully filter and transfer the wine into sterilized bottles. Ensure each bottle is sealed tightly to preserve the wine's quality.

Bottle the Wine

Label each bottle with the wine's name, vintage, and any other relevant information.
