Carefully destem the Tempranillo and Mazuelo grapes to remove the stems. Then, gently crush the grapes to release their juices, but do not overly crush the seeds to avoid bitterness.

Destemming and Crushing

Transfer the crushed grapes into temperature-controlled stainless steel tanks. Maintain a fermentation temperature between 24-28°C (75-82°F) to ensure optimal yeast activity. Allow the grapes to ferment for approximately 10-14 days.

Fermentation in Stainless Steel

After fermentation, transfer the wine into oak barrels. Let the wine age for 12 months to develop complex flavors and aromas. During this time, monitor the wine for its development and adjust aging if necessary.
