Select ripe Tinta de Toro grapes from estate-owned vineyards planted in 1900. Ensure that the grapes are free from any rot or disease.

Harvesting the Grapes

Gently crush the harvested grapes to release the juice and pulp. This can be done using a traditional grape crusher or by foot.

Crushing the Grapes

Add 50 grams of sulfur dioxide to the crushed grape mixture to protect against oxidation and spoilage.

Adding SO2

Transfer the crushed grapes into 600L open top neutral oak barrels for fermentation. Ensure that the barrels are clean and properly sanitized.

Fermentation Setup

Sprinkle 5 grams of yeast over the grape mixture in the barrels to initiate fermentation.

Adding Yeast

Allow the wine to ferment at controlled temperatures for approximately 2-3 weeks. Stir the mixture daily to ensure even fermentation.

Monitoring Fermentation

After fermentation is complete, carefully rack the wine into a clean container, leaving sediment behind.

Racking the Wine

Transfer the racked wine back into neutral oak barrels for aging. Allow the wine to age for at least 6-12 months, tasting periodically to monitor development.

Aging the Wine

Once the wine has reached the desired flavor profile, bottle the wine in clean, sanitized bottles and seal with corks.
