RATED 'M' SHAKES

Refreshing with notes of fresh lemon zest, crisp green apple, and hints of honeysuckle. A well-balanced wine that is easy to drink yet has a sophisticated character.

Wash the green apple and lemon. Thinly slice half the green apple into wheels (reserve the other half for later use). Cut the lemon into 6 thin slices for garnish. Zest the lemon to yield about 1 tablespoon of zest.

Cut one apple wedge into thin matchsticks (julienne) for a subtle textural garnish to float in the glass. Tear mint leaves from the stems, keeping some whole leaves for garnish.

If using commercial honeysuckle syrup, skip to next section. To make honey syrup: combine 1/4 cup honey and 1/4 cup warm water, stir until combined. Let cool. Measure 2 teaspoons for the cocktail.

Chill a wine glass or large stemmed glass in the freezer for 5–10 minutes or fill it with ice to chill and discard excess before serving.

Place 3–4 large ice cubes in each serving glass. Add 1–2 thin green apple wheels and 1 lemon slice into the glass. Add 2–3 torn mint leaves and a small pinch (about 1/2 teaspoon) of lemon zest into the bottom of the glass to release aromatics.

Pour 5 ounces (about 150 ml) of chilled Pinot Grigio into the glass. Add 1 ounce (30 ml) sparkling water to give a gentle spritz and maintain the wine’s delicate aromatics.

Stir gently once to combine. Add 2 teaspoons of honeysuckle syrup (or honey syrup) and stir very gently to incorporate; this will lift the wine's floral-sweet notes without overpowering acidity.

Top with a few julienned apple matchsticks and a whole mint leaf. Finish by grating a touch of fresh lemon zest over the top (use about 1/8 teaspoon per glass). If desired, float an edible flower on the surface for an elegant touch.

Serve immediately while chilled. This light spritz highlights the Pinot Grigio’s lemon zest, green apple, and honeysuckle notes—pair with light seafood, fresh salads, soft cheeses, or simple antipasti.

To serve multiple guests (punch-style): in a pitcher combine the remaining bottle of Pinot Grigio, remaining sparkling water (about 3/4 to 1 cup), remaining sliced apples and lemon slices, remaining mint stems, and 1–2 tablespoons honey syrup to taste. Chill 30 minutes before serving over ice.
