Fit Turkey Wrap

A juicy, aromatic blend of grenache and syrah. Notes of dark cherries, cassis, black pepper and thyme. Medium-bodied with fine tannins. Juicy and well-driven with blue fruit at the center and a spicy finish.

Store the bottle upright and chill to serving temperature: aim for 15–17°C (59–63°F). If the bottle is warmer, place in the refrigerator for 20–30 minutes. Use a thermometer if available to verify temperature.

Chill and inspect

Decanting is optional but recommended if the wine has been recently bottled or if you want to open up aromatic complexity. If decanting, pour slowly into a decanter and allow to breathe for 20–40 minutes. For an older bottle (10+ years), decant briefly (10–15 minutes) and check for sediment when opening.

Decanting decision

Use medium to large red wine glasses (Burgundy or Rhône-style). Warm the glass slightly in your hands, then pour a small tasting measure (one ounce) to evaluate aroma first.

Select glassware

Pour 4–6 ounces (120–180 ml) per serving into each glass, filling to the widest part of the bowl to allow the wine to breathe and concentrate aromas.

Pour

Swirl the glass once or twice, then sniff. Look for primary notes of dark cherries and cassis, mid-palate herbal thyme and peppery spice, plus any floral or blue-fruit nuances. Note the medium body and fine tannins.

Aroma evaluation

Take a small sip, coat the palate, and let the wine open on the tongue. Notice the juicy blue fruit center, the spicy peppery finish, and the balance between acidity and tannin. Evaluate length and any evolving tertiary notes after 5–10 minutes of exposure.

Taste and assess

Pair the wine with lamb, grilled mushrooms, ratatouille, charcuterie (black peppered salami, air-dried ham), blue-fruit compote, or medium-aged sheep/blue cheeses. Serve water alongside to refresh the palate between bites.

Pairing suggestions

Recork the bottle and store upright in a cool place or refrigerator. Consume within 2–4 days for best freshness; the wine may gradually lose aromatic lift after that.
