Method
Prepare and soak beans
Sort the dried black beans, removing any small stones or shriveled beans. Rinse thoroughly under cold running water.
Place the rinsed beans in a large bowl or pot and cover with about 6 cups of water. Soak them at room temperature for at least 6–8 hours or overnight. For a quick-soak method: bring beans and 6 cups water to a boil for 2 minutes, remove from heat, cover and let sit for 1 hour; then drain and rinse.
After soaking, drain and rinse the beans. Reserve.
Cook the beans
Transfer the soaked, drained beans to a large pot. Add 6 cups fresh water and the bay leaf. Bring to a gentle boil over medium-high heat.
Immediately reduce heat to low to maintain a gentle simmer. Skim any foam that rises to the surface with a spoon and discard.
Partially cover the pot and simmer for 60–75 minutes, stirring occasionally and checking liquid level. Add more hot water (about 1/2 cup at a time) if the beans look too dry; beans should remain just covered. Begin checking for tenderness after 50 minutes—beans should be tender but not falling apart.
Prepare aromatics (sofrito)
Add the minced garlic, ground cumin, dried oregano, and black pepper. Cook, stirring constantly, for 1–2 minutes until fragrant, being careful not to burn the garlic. Remove skillet from heat.
Combine, season, and finish
When the beans are tender (after ~60–75 minutes), remove and discard the bay leaf. Carefully spoon the sautéed aromatics (sofrito) into the pot with the beans, stirring gently to combine.
Simmer the beans together with the sofrito for an additional 10–15 minutes so flavors meld. If the liquid is too thin, simmer uncovered to reduce to desired thickness; if too thick, add a little hot water and stir.
Stir in salt, sugar (if using), and 1 tablespoon vinegar. Taste and adjust seasoning: add more salt, a splash more vinegar, or a pinch of sugar as needed to balance flavors.
Turn off heat and let beans rest 10 minutes to allow flavors to settle. Garnish with chopped cilantro and serve with lime wedges on the side.
