1

Prepare the glass

Combine black cocoa powder (or a pinch of activated charcoal) and fine sugar on a small plate. Wet the rim of a chilled coupe or martini glass with a lime wedge, then dip the rim into the black sugar mixture to coat evenly. Set the glass aside in the freezer or fridge to chill while you mix the cocktail.

2

Dry shake (if using egg white)

If using the egg white for foam, add the egg white, vodka, black raspberry liqueur, fresh lime juice, cranberry juice, and simple syrup to a cocktail shaker without ice. Dry shake vigorously for 15–20 seconds to build a froth.

3

Shake with ice

Add ice to the shaker (about 3/4 full). Shake hard for 12–15 seconds until the shaker is very cold and the outside is frosty. If you did not use egg white, simply combine all liquid ingredients and shake with ice for the same duration.

4

Strain

Double strain the cocktail into the prepared chilled glass using a Hawthorne strainer and a fine mesh strainer (this removes ice shards and ensures a smooth texture).

5

Create the 'vampire' effect

Drop the maraschino cherry into the drink. Using a small spoon or the tip of a cocktail pick, place small dots or a thin line of edible red gel or a few drops of grenadine on the foam or at the glass edge so it appears like a dripping blood streak down the inside of the glass.

6

Serve

Serve immediately while cold. Provide a short cocktail pick or straw for the guest to enjoy the garnish. The rimmed black sugar gives an icy 'penguin' look while the red drip provides the 'vampire' visual and a bright sweet burst.
