Build the blend

Measure and combine 2 tsp Assam, 1 tsp high-mountain oolong and 1 tsp dried chamomile in a small mixing bowl or tea infuser so the flavors marry briefly before steeping.

If using a teapot or large infuser, place the blended leaves in the basket or an infuser that allows expansion.

Citrus & Floral Brighteners

Add 1 tablespoon thin strips of lemon peel and 3 thin slices of fresh ginger to the tea leaves in the infuser. These will lend bright citrus top notes and a gentle warming note from the ginger.

If you prefer a stronger orange blossom aroma, add the 1 tsp orange blossom water later to the steeped tea (see Finish step). Adding it to hot water can make it volatile, so the late addition preserves aroma.

Steeping & Sweetening

Short high-temperature steep

Bring 12 oz (about 350 ml) of filtered water to a near-boil (about 205°F / 96°C). Pour over the infuser/teapot containing the tea blend. Cover and steep for 3 minutes to extract body from the Assam while letting oolong and chamomile contribute floral balance.

After 3 minutes, remove the infuser or strain the leaves and aromatics. Taste the concentrated infusion — it should be brisk with floral notes. While still hot, stir in 1 tablespoon honey and 1 teaspoon vanilla syrup (or the vanilla/extract + simple syrup substitute) until dissolved.

Cooling & Aromatics

Allow the sweetened tea to cool at room temperature for 10 minutes, then place in the refrigerator or an ice bath to bring it down to near-cold (about 10–15 minutes). If you reserved orange blossom water, stir it in now (1 tsp) to preserve its delicate aroma.

Taste and adjust sweetness: add up to 1 tsp more honey or simple syrup if you prefer sweeter. The finished concentrate should be pleasantly sweet but not cloying because it'll be slightly diluted over ice.

Finish & Serve

Fill a tall glass with 1 cup of ice. Pour the cooled tea concentrate over the ice. If the concentrate seems strong, top with an additional 2–3 oz cold filtered water to balance — you should end with about 12 oz finished beverage.

Garnish with a thin lemon wheel and optional edible microflowers or a small mint sprig. Serve immediately with a long spoon or straw to stir before sipping.

Store any leftover cooled concentrate (without ice) in a sealed container in the fridge for up to 48 hours. Re-chill before serving and adjust dilution/sweetness as needed.
