Espresso Base
Prepare and pull espresso
Preheat your espresso machine and portafilter by running a blank shot to stabilize temperature. Dose 18 g of freshly ground dark roast coffee into a clean portafilter, level and tamp evenly with about 30 lbs of pressure. Lock the portafilter into the group head and extract a double shot of espresso (about 36 ml) directly into a warmed 8–10 oz cup or small pitcher. Aim for a 25–30 second extraction. Set aside and keep warm.

Combine chocolate syrup and liqueur
In the serving cup or an intermediate mixing glass, add 10 ml dark chocolate syrup. If using, add 10 ml hazelnut liqueur. Add a pinch (about 1/8 tsp) of the sea salt to brighten flavors — reserve the remainder for finishing. Stir these together to slightly warm and dissolve the syrup into the small volume.
Immediately after pulling the espresso, pour the 36 ml espresso into the cup with the syrup/liqueur and stir for 10–15 seconds to fully incorporate. Taste and adjust: if it feels too intense, add a touch more liqueur or a few more drops of syrup; if too sweet, add a hair more salt (no more than an extra pinch).

Pour 150 ml whole milk and 20 ml heavy cream (omit the cream if using a non-dairy milk) into a chilled steaming pitcher. Purge the steam wand, then submerge and steam to create silky microfoam: position the wand just below the surface until the milk reaches about 40°C (104°F) and you hear a quiet hissing, then deeper to heat to 60–65°C (140–149°F). Aim for small, dense microbubbles and a glossy texture. Tap and swirl the pitcher to integrate foam.
Hold back most foam with the pitcher tilt and pour the steamed milk into the espresso-syrup mixture, starting from about 1–2 inches above the cup to combine, then lower the pitcher as the cup fills to layer a thin velvety cap of foam. Target about 150–180 ml finished beverage volume.
Garnish
Finish with a light dusting of cocoa powder or a sprinkle of finely grated dark chocolate over the foam. Optionally place 2–3 whole coffee beans on top as a visual accent. If desired, lightly grate a tiny pinch of sea salt over the foam to emphasize the chocolate-coffee contrast (use sparingly).
Serve
