Seared Delta King Scallops with Citrus Beurre Blanc, Roasted Fingerling Potatoes & Pickled Vegetables

Prep and roast potatoes

Preheat oven to 425°F (220°C). Place halved fingerling potatoes in a bowl and toss with 1 tablespoon extra-virgin olive oil, 1 teaspoon salt, 1 teaspoon black pepper, smashed garlic cloves, and thyme leaves. Spread potatoes cut-side down on a rimmed baking sheet in a single layer. Roast for 20–25 minutes until golden and tender. Remove garlic after 15 minutes if it begins to brown too much. Keep warm.

Make quick pickled vegetables

Combine rice vinegar, water, sugar, 1/2 teaspoon kosher salt in a small bowl and stir until sugar and salt dissolve. Add sliced carrots, cucumber and red onion, pressing them down so they are submerged. Let sit at room temperature for at least 15 minutes (can refrigerate up to 4 hours). Drain lightly before plating; reserve a tablespoon of the pickle liquid for the sauce if desired.

Prepare citrus beurre blanc base

In a small saucepan over medium heat, combine shallots and white wine. Bring to a simmer and reduce until about 2 tablespoons of liquid remain (this takes about 6–8 minutes). Add white wine vinegar and reduce for 1 minute more. Reduce heat to low. If using, stir in heavy cream (2 tsp) to help emulsify. Whisk in cold cubed butter, one cube at a time, allowing each to melt and emulsify before adding the next; keep the sauce warm but do not boil. Finish with lemon juice and lemon zest, then season with a pinch of salt and pepper to taste. Keep warm in a thermos or over very low heat, whisking occasionally.

Dry and season scallops

Pat scallops thoroughly dry with paper towels — moisture prevents a good sear. Season both sides lightly with kosher salt (about 1/8 tsp per scallop) and a light dusting of freshly ground black pepper.

Sear scallops

Heat a large heavy skillet (preferably stainless steel or cast iron) over high heat until smoking slightly. Add 1 teaspoon neutral vegetable oil and 2 tablespoons of unsalted butter. When the butter foams and the pan is very hot, place scallops in the pan spaced apart (work in two batches if needed). Do not move them. Sear for 1.5–2 minutes until a deep golden crust forms, then flip and cook 45–60 seconds on the second side until opaque in the center. Remove to a paper-towel-lined tray and tent loosely with foil to keep warm. If pan browning isn't deep enough, increase heat slightly for the second batch. Reserve any browned fond in pan.

Finish beurre blanc (optional pan incorporation)

If desired, deglaze the scallop pan briefly with 1–2 tablespoons of white wine, scraping up the fond, and add that deglazing liquid to the beurre blanc to deepen flavor. Taste and adjust seasoning with lemon juice, salt, and pepper. If the sauce is too thin, whisk in small additional cubes of cold butter off heat to thicken; if too thick, whisk in a teaspoon or two of warm water or reserved pickle liquid.

Plate

Divide roasted potatoes among four plates (about 3 halves per person) and drizzle lightly with a bit of the beurre blanc. Arrange three scallops on each plate over the potatoes or beside them. Spoon 1–2 tablespoons of warm citrus beurre blanc over the scallops. Tuck a small mound of drained pickled vegetables beside the scallops. Garnish with microgreens or chopped chives and a small lemon wedge if desired. Serve immediately.

Chef's timing notes

Start by roasting potatoes (20–25 min). While they roast, make pickles (15 min) and reduce the wine for the beurre blanc. Sear scallops last so they remain hot and crisp (takes about 10 minutes total including heating pan). Total active hands-on time ~30 minutes; total elapsed ~40 minutes.
