Chill and prep

If possible, chill the blender jar or food-processor bowl in the freezer for 10–15 minutes to help keep the mixture cold and maintain a soft-serve texture. Have a spatula and serving cups or cones ready.

Make the base Dole Whip

Add frozen pineapple chunks to a high-speed blender or a food processor. Add the coconut milk (or milk), granulated sugar (or simple syrup), fresh lime juice and salt.

If you prefer a creamier, richer texture, add the optional 1/2 cup vanilla or pineapple soft-serve ice cream (or frozen yogurt). This is optional — traditional Dole Whip is dairy-free and uses only frozen fruit and a bit of liquid.

Pulse or blend on low, then increase speed, scraping down the sides as necessary, until the mixture becomes very smooth and thick, like soft-serve ice cream. If mixture is too stiff to move, add up to 1 tablespoon more milk at a time; avoid adding too much liquid or it will be too soft.

Taste and adjust sweetness and acidity: add up to 1 tablespoon more sugar/simple syrup for sweetness, or a little more lime juice for brightness. For extra pineapple aroma, stir in pineapple extract (1/2 tsp) now.

Make flavor variations

Mango Dole Whip

Replace half (or all) of the frozen pineapple with frozen mango or blend in 1/2 cup mango puree with the base. Blend until smooth and thick.

Strawberry Dole Whip

Replace half (or all) frozen pineapple with frozen strawberries or add 1/2 cup strawberry puree to the base mixture and blend until smooth.

Chocolate Dole Whip

Add 2 tablespoons chocolate syrup into the base after blending and pulse briefly to incorporate, or blend with a few frozen banana slices to help chocolate flavor and texture.

Vanilla-pineapple

Add 1/4 tsp vanilla extract and the optional 1/2 cup vanilla soft-serve before blending for a creamy vanilla-pineapple twist.

Serve and garnish

Spoon or pipe the soft-serve into chilled cups, cones, or bowls. For a more authentic soft-serve presentation, transfer the blended mixture to a piping bag (or sturdy zip-top bag with a corner snipped) and pipe into serving vessels.

Garnish with a pineapple wedge, maraschino cherry, toasted coconut flakes and mint leaves as desired. Serve immediately for best texture — Dole Whip slightly melts if left at room temperature.
