Prepare pan and tools
Line an 8x8-inch (20x20 cm) square pan with parchment paper, leaving an overhang for easy removal. Lightly grease the parchment with 1 teaspoon of butter. Have a candy thermometer, a heatproof spatula, and small bowls ready.
Combine ingredients
In a medium heavy-bottomed saucepan combine 2 cups granulated sugar, 2 tablespoons light corn syrup, and 1 cup water. Stir gently to moisten the sugar but avoid splashing onto the sides of the pan.
Dissolve and boil
Place the pan over medium heat and stir until the sugar dissolves and the mixture is clear. Once dissolved, stop stirring. Clip a candy thermometer to the side and bring the syrup to a rolling boil.
Cook to target temperature
Boil the syrup without stirring until it reaches 300°F (149°C), the hard-crack stage. This usually takes 10–20 minutes depending on your stove. Watch carefully — sugar can burn quickly.
Finish the base
Remove the pan from heat immediately when 300°F is reached. Add 2 tablespoons unsalted butter, 1 teaspoon vanilla extract, and 1 teaspoon fine sea salt. Stir quickly and carefully (the syrup will bubble and steam) until butter is melted and mixture is glossy.

Divide the hot candy base into portions in heatproof bowls if making multiple flavors (use a metal spoon to transfer quickly). Work one portion at a time while warm because the candy will set quickly.
For chocolate: whisk 2 tablespoons unsweetened cocoa powder into one portion until fully incorporated and glossy. For peppermint: stir in 1 teaspoon clear peppermint extract (do not add too much or it will be overpowering). For fruit-flavored or colored candy: stir in 2 tablespoons strawberry jam (for flavor) and up to 1/2 teaspoon gel food coloring to intensify color. If using jam, strain small seeds if desired before adding.
If making multiple colors, pour each flavored portion immediately into separate prepared areas of the lined pan or into silicone candy molds.
Pouring, finishing and coatings
Pour the still-hot flavored candy into the prepared pan in an even layer about 1/4 inch thick. If using molds, fill them to the rim. Work quickly — the candy sets in minutes.
If you want swirls or multi-color effects, pour different colored portions next to each other and drag a skewer lightly through them to create patterns before the candy sets.
Before the candy fully hardens (within 1–2 minutes), sprinkle crushed nuts or sprinkles on top if using. Allow the candy to cool and harden completely at room temperature, about 30–45 minutes.
Once firm, lift the set candy from the pan using the parchment overhang. If you poured a slab, dust a cutting board with confectioners' sugar, invert the slab onto it, peel off parchment, and use a sharp knife or bench scraper to cut into desired bite-sized pieces. If pieces are sticky, toss them lightly in confectioners' sugar.
Store the candy in an airtight container in a cool, dry place separated by parchment layers for up to 2 weeks. Avoid refrigeration (it can make candy sticky).
