Base Cake
Mix dry ingredients
In a medium bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until evenly combined.
Combine wet and dry
Pour the wet mixture into the dry ingredients and stir just until combined; do not overmix. Scrape batter into prepared pan and smooth the top.
Bake
Bake for 25–30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Allow cake to cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Optional shaping
If you want a more barrel-like shape, once cooled, level the top and trim the edges slightly to create a rounded barrel profile or stack two thinner cakes (halve batter across two pans) and slightly dome the top layer with trimmed cake pieces. Crumble any trimmed pieces for filling or coating.

Make ganache
Place chocolate chips in a heatproof bowl. Heat the heavy cream in a small saucepan until it just begins to simmer (do not boil). Pour hot cream over the chocolate chips and stir until smooth and glossy. Add the corn syrup and stir until incorporated. Let cool until spreadable but still pourable (about 10–15 minutes). Reserve 1/3 cup of ganache to use as a drip/adhesive.
Prepare marshmallow-candy filling
In a small saucepan over low heat, combine mini marshmallows and 2 tablespoons of the ganache (or 2 tbs peanut butter if using). Stir until marshmallows melt into a tacky, spreadable mixture. Remove from heat and fold in 1 cup of the assorted small candies (reserve remaining candies for topping). This will be a chunky, sweet binder to hold candies inside the barrel.
Assemble barrel cavity (if hollow center desired)
If you want the cake to hold candies inside, use a small round cutter or spoon to remove a shallow well in the center of the cooled cake (about 1 inch deep), leaving a rim. Save removed cake crumbs for mixing into filling or to use as decoration.
Decoration & Assembly
Crumb coat and chocolate shell
Place the cooled cake on a serving plate. Spread a thin layer of the reserved ganache (crumb coat) over the entire cake to seal in crumbs. Refrigerate for 10 minutes to set.
Fill barrel and top with candies
If you hollowed a cavity, spoon the marshmallow-candy filling into the well and pack gently. If not hollowed, spread a layer of ganache over the top and press the remaining candies into it so they sit on the cake like a candy-filled barrel. Reserve some candies for the final finish.
Create barrel staves and hoop effect
Press short pretzel sticks or pieces of candy canes vertically around the sides of the cake to mimic wooden staves. Space them evenly around the cake, pressing the bottoms slightly into the ganache so they adhere. Use a small offset spatula to smooth remaining ganache between staves if any gaps show.
Final ganache glaze and decorative touches
Pour the remaining ganache over the top to create a glossy finish, allowing some to drip slightly down the sides. Immediately sprinkle cookie crumbs or crushed graham crackers around the base to resemble dirt/wood chips. Arrange reserved candies on top in a mound to resemble a barrel overflowing. Drizzle warmed peanut butter thinly over the candies (optional) and scatter sprinkles. Dust lightly with powdered sugar if desired.
Chill and set
Refrigerate the assembled cake for at least 30 minutes to let ganache and filling set. Bring to room temperature for 15 minutes before serving so the ganache softens slightly and candies are easier to bite.
Serve
Slice with a sharp knife (wipe between cuts for cleaner slices) and serve each piece with a few extra loose candies if desired.
