Prepare the Clams

In a large pot, add the clams and 1 cup of water. Cover and steam over medium heat until the clams open, about 5-7 minutes. Discard any clams that do not open.

Cook the Bacon

In a separate large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

Sauté Vegetables

In the bacon drippings, add butter, onions, and celery. Sauté until the vegetables are soft, about 5 minutes.

Add Potatoes and Seasoning

Add diced potatoes, thyme, bay leaf, salt, and black pepper to the pot. Pour in the clam juice and bring to a simmer. Cook until the potatoes are tender, about 15 minutes.

Combine Ingredients

Remove the bay leaf and stir in the heavy cream and cooked clams (chopped if desired). Cook for an additional 5 minutes to heat through.

Ladle the chowder into bowls, crumble the cooked bacon on top, and enjoy!
