Mousse Preparation

Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

Whip the Cream

In a separate bowl, whip 200ml of the heavy cream until soft peaks form. Refrigerate until needed.

Separate the Eggs

Carefully separate the egg yolks from the whites. Place the yolks in a mixing bowl and the whites in a clean bowl.

Mix Egg Yolks

Add the granulated sugar and vanilla extract to the egg yolks. Whisk until pale and creamy.

Combine Chocolate and Yolks

Fold the melted chocolate into the egg yolk mixture until well combined.

Beat Egg Whites

Add a pinch of salt to the egg whites and beat until stiff peaks form.

Fold in Egg Whites

Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Fold in Whipped Cream

Finally, fold the whipped cream into the chocolate mixture until no streaks remain.

Chill the Mousse

Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.

Serve

Before serving, whip the remaining 100ml of heavy cream and top each mousse with a dollop of whipped cream.
