    Prepare bagel

    Slice the bagel horizontally. Spread 1 tablespoon softened butter evenly on the cut surface that will be the top of the finished sandwich (the 'bottom' of the assembled, upside-down sandwich). This will help crisp and flavor the exterior when toasted.

    Assemble final sandwich

    Place the pepper jack slice onto the bottom half of the bagel (the half that will be on top when flipped). Reserve the top half nearby for final assembly after eggs and meat are ready.

Eggs

    Mix eggs

    Crack 2 large eggs into a bowl. Add 2 tablespoons milk, 1/4 teaspoon salt (reduce if using cured bacon), and a pinch of black pepper. Whisk until pale and slightly frothy.

    Scramble gently

    Heat 1 teaspoon unsalted butter in a nonstick skillet over medium-low heat until melted and foamy. Pour in the egg mixture. Let eggs sit undisturbed for 8–12 seconds, then gently push from the edges toward the center with a rubber spatula, forming large soft curds. Continue folding and gently moving the eggs until mostly set but still slightly moist, 1–2 minutes total. Remove from heat — carryover will finish them.

    Cook or reheat meat

    If using raw bacon: heat a small skillet over medium, add 1 teaspoon oil, and cook 2 strips until crisp, 5–7 minutes, turning occasionally. Drain on paper towel and keep warm. If using sausage patties: cook 2 patties in a skillet over medium 4–5 minutes per side until browned and cooked through, or reheat pre-cooked sausages per package instructions. Alternatively, microwave cooked sausage or bacon for 20–30 seconds to reheat.

Final assembly & Finish

    Build the upside-down sandwich

    Place the buttered bagel bottom (buttered side down) on a plate. Put the pepper jack slice on top of that half, then arrange the warm sausage patties or bacon on top of the cheese. Spoon the soft-scrambled eggs over the meat, keeping them in a compact layer. Top with the remaining bagel half (cut side down). The buttered exterior is now on top — this is the 'upside-down' orientation.

    Optional press and melt

    If you want melted cheese and a lightly crisp exterior, heat a clean skillet over medium-low. Place the assembled sandwich butter-side up in the skillet and press gently with a spatula or a second pan for 30–60 seconds per side until cheese is melted and the exterior is golden. Flip carefully so the buttered side gets direct contact. Alternatively, place the sandwich under a broiler for 30–60 seconds, watching closely, to melt cheese and crisp the top.

    Transfer the sandwich to a plate and let rest 30 seconds. Garnish with chopped chives and serve with hot sauce or salsa on the side if desired.
