Make simple citrus syrup

Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Add the citrus zest. Bring mixture to a gentle simmer over medium heat, stirring until the sugar fully dissolves (about 3–4 minutes). Do not boil vigorously. Remove from heat and stir in the fresh citrus juice. Let the syrup cool to room temperature (about 20–30 minutes). Strain out zest and any solids through a fine mesh sieve into a clean container.

If you prefer a thicker, longer-lasting syrup, simmer for an additional 2–3 minutes to slightly reduce; for a lighter syrup keep at the minimum time.

Blend flavor into syrup

Stir 3 tablespoons of the chosen fruit purée or concentrated syrup into the cooled citrus syrup until fully incorporated. Taste and adjust: for stronger fruit flavor, add up to 1 additional tablespoon; for a milder profile use 1–2 tablespoons. If using fresh herbs, lightly bruise the leaves with the back of a spoon and steep them in the syrup for 10 minutes, then strain out.

Mix the soft drink

Fill two tall glasses with 1 cup of ice each. For each serving, add 2–3 tablespoons of the prepared flavored syrup (about 30–45 ml). Pour 1 1/2 cups (about 360 ml) chilled carbonated water over the syrup and gently stir once to combine. Taste and adjust sweetness or intensity by adding more syrup (1 tablespoon increments).

Garnish each glass with citrus slices and a sprig of the optional fresh herb. Serve immediately while fizzy.

Storage: keep leftover syrup refrigerated in a sealed container for up to 2 weeks. Carbonated water is best used fresh.
