Method
Common Base Preparation
Prep buns and spread
Preheat the oven to 350°F (175°C). Slice the slider buns horizontally and separate tops from bottoms. In a small saucepan or microwave-safe bowl, melt the unsalted butter and stir in yellow mustard, mayonnaise, salt, and black pepper until combined. Brush or spoon about two-thirds of the butter mixture onto the cut side of the bun tops and bottoms; reserve the rest for finishing in the oven.
Arrange the bottom halves of the 12 buns in a single layer in a 9x13-inch baking dish or on a rimmed baking sheet so they are snug but not overlapping.
Pulled Pork Slider Assembly & Finish
Combine pork with sauce
In a medium bowl, mix the warmed pulled pork with the barbecue sauce and sliced red onion until evenly coated. Taste and adjust seasoning if needed.
Evenly distribute the pulled pork mixture across the 12 bun bottoms, dividing so each slider gets roughly equal amount (about 2 tablespoons pork per slider). If using coleslaw, top each portion of pork with a small spoonful (about 1 tablespoon) of coleslaw.
Place the bun tops over the sliders. Brush the remaining butter-mustard mixture over the tops of the buns. Cover the dish tightly with aluminum foil and bake in the preheated oven for 12–15 minutes, until warmed through and butter is absorbed. Remove foil and bake 2–3 minutes more to lightly brown the tops if desired.
Remove from oven, garnish with chopped parsley and secure each slider with a toothpick before serving.
Ham & Cheese Slider Assembly & Finish
Assemble ham and cheese layers
On the bottom halves of the arranged buns, spread a thin layer of Dijon mustard (combine the 1 tbs Dijon into a small bowl if using across all 12). Fold or stack the deli ham so each slider gets one slice (or about 1-1.5 ounces). Top pairs of ham slices with one slice of Swiss or cheddar so each slider has cheese on top of ham (use half-slices if necessary to cover 12 sliders).
Make sweet glaze
In a small bowl, whisk together the brown sugar and Worcestershire sauce until a syrupy glaze forms. Brush half of this glaze over the cheese on the assembled sliders and reserve the remainder to mix with the reserved butter spread if desired.
Place bun tops over assembled ham and cheese. Brush remaining butter-mustard mixture (and remaining brown sugar glaze if used) on top of buns. Cover tightly with foil and bake in preheated 350°F (175°C) oven for 12–15 minutes, until cheese is melted and sliders are heated through. Uncover and bake 2–3 minutes more to lightly brown the tops.
Remove from oven, garnish with chopped parsley and insert toothpicks to hold sliders together. Serve hot.
