Armadillo Eggs
Prep jalapeños
Wear gloves. Slice each jalapeño lengthwise and remove seeds and membranes with a spoon to reduce heat. Rinse and pat dry. If you prefer milder, remove more ribs; for hotter, leave some seeds.
Make filling
In a medium bowl, combine cooked shredded chicken, softened cream cheese, shredded cheddar, chopped green onions, garlic powder, smoked paprika, kosher salt, and black pepper. Mix until smooth and evenly combined.
Stuff peppers
Spoon about 2 tablespoons of the chicken-cheese mixture into each jalapeño half, pressing lightly so the filling is compact and level with the pepper edges. Wipe any excess from the outside so bacon will adhere.
Wrap with bacon
Wrap one slice of bacon around each stuffed jalapeño, overlapping ends. Secure with a soaked toothpick through the bacon and into the pepper. Repeat for all peppers.
Preheat grill or oven
If grilling: preheat grill to medium-high (about 375–425°F / 190–220°C) and oil grates. If using oven: preheat to 425°F (220°C) and line a baking sheet with foil and a wire rack.
Grill or bake
Place bacon-wrapped peppers on the grill or on the wire rack. Cook 10–12 minutes, turning once, until bacon is partially crisp. Brush each pepper generously with BBQ sauce and continue cooking 4–6 minutes more, turning and brushing again, until bacon is fully cooked and glossy (internal temperature of bacon area ~145°F). Total cook time ~16–20 minutes depending on heat.
Rest
Remove peppers to a tray and let rest 5 minutes so filling firms slightly and toothpicks can be removed if desired before serving.
Crispy Fried Potato Bed
Heat oil
In a heavy skillet (10–12 inches) or a deep frying pan, pour enough oil to reach about 1/4–1/2 inch depth. Heat over medium-high until oil registers 350–375°F (175–190°C) or until a small piece of potato sizzles immediately on contact.
Fry potatoes
Working in batches, add the dried potato pieces in a single layer and fry, stirring occasionally, until golden brown and crisp, about 6–8 minutes per batch depending on size. Use a slotted spoon to transfer fried potatoes to a paper-towel-lined tray to drain. Immediately season with 1/2 tsp salt, 1/4 tsp black pepper, and 1/4 tsp smoked paprika while hot. Repeat until all potatoes are fried.
Finishing & Serving
Sauce & garnish
Drizzle a little extra BBQ sauce over the armadillo eggs and potatoes or serve extra sauce on the side. Garnish with a sprinkle of chopped parsley and serve with lime wedges for squeezing over the peppers.
Serve
Serve hot. If toothpicks were used, remove before eating or let diners remove themselves. Enjoy immediately for best contrast between the hot stuffed peppers and the crispy potato bed.
