Prepare onions

Peel the onions and slice into 1/2-inch thick rings. Separate rings gently and set aside. If some inner rings are too small, reserve them for another use.

Dry rings

Pat the onion rings dry with paper towels to remove excess moisture — this helps the batter adhere and reduces oil splatter.

Make dry mix

In a shallow wide bowl, whisk together the all-purpose flour, cornstarch, baking powder, kosher salt, black pepper, garlic powder, and smoked paprika until evenly combined.

Make wet mix

In a separate medium bowl, beat the eggs with the whole milk until smooth.

Prepare coconut-panko coating

In a third shallow bowl, combine the panko breadcrumbs and shredded coconut. Break up any large coconut clumps so the mixture is uniform.

Coat rings (three-step breading)

Working in batches of 6–8 rings, dredge each ring first in the dry flour mixture, shaking off excess, then dip into the egg-milk mixture allowing excess to drip off, and finally press into the panko-coconut mixture until well coated. Place coated rings on a wire rack while you finish the rest. Return any loose crumbs to the panko-coconut bowl.

Heat oil

In a heavy-duty deep skillet or Dutch oven, pour enough neutral oil to reach about 1 to 1 1/2 inches up the side (about 3–4 cups depending on your pan). Heat over medium-high heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread — it should sizzle steadily and brown in about 45–60 seconds.

Fry rings

Fry the coated rings in batches without crowding the pan, 2–3 minutes per side or until golden brown and crisp. Flip once using tongs. Maintain oil temperature around 340–360°F (170–180°C) — adjust heat as needed between batches.

Drain and keep warm

Using a slotted spoon or spider, transfer finished rings to a wire rack set over a baking sheet or to paper towels to drain briefly. For best texture, keep rings warm in a 200°F (95°C) oven while you fry the remaining batches.

Finish

When all batches are done, give the rings a final light sprinkle of kosher salt to taste and serve with lemon wedges if using.

Zesty Horseradish & Mustard Sauce

Combine mayonnaise, Dijon mustard, prepared horseradish, apple cider vinegar, honey, and hot sauce (if using) in a small bowl. Whisk until smooth and uniform.

Stir in the chopped chives or green onion. Season with kosher salt and freshly ground black pepper to taste. Adjust acidity or heat by adding more vinegar or horseradish in 1/4-tsp increments.

Cover and refrigerate for at least 15 minutes to let flavors meld. Bring to room temperature before serving alongside the onion rings.
