Chill glass
If desired, chill a copper mug or highball glass in the freezer for 5–10 minutes to keep the cocktail colder longer.
Juice citrus
Roll the blood orange and lime on the counter to release juices. Cut and juice enough to yield 1 oz blood orange juice and 0.5 oz fresh lime juice. Strain any large pulp or seeds for a smoother drink.
Build cocktail
Fill the chilled mug or glass with about 1 cup of cubed ice. Pour in 2 oz Espolón Silver tequila, 1 oz fresh blood orange juice, 0.5 oz fresh lime juice, and 0.25 oz simple syrup (omit if your blood orange is very sweet or you prefer less sweetness).
Top with ginger beer
Gently top the mixture with 4 oz Goslings ginger beer. Stir once or twice lightly with a bar spoon to integrate — avoid over-stirring to preserve carbonation.
Adjust seasoning
Taste and adjust: add up to 0.25 oz more simple syrup if you prefer a sweeter mule, or a splash more lime (0.25 oz) for more brightness.
Garnish & Finish
Garnish the drink with a blood orange wheel perched on the rim and a lime wheel or wedge. Clap a mint sprig between your palms once to release aromatics and tuck it into the drink if using.
Serve immediately with a straw (optional). Provide a small spoon or stirrer so the drinker can re-mix as the ice melts.
