Prepare the apples
Wash the apples thoroughly under running water to remove any wax or residue. Core each apple and cut into quarters. Peeling is optional — leaving the peel adds nutrients and body to the juice, but for a smoother texture you can peel them.
Pulse apples
Place the apple quarters in a blender or food processor in batches if needed. Add 2 tablespoons of the cold water to help blending. Pulse or blend on high until the apples are broken down into a smooth purée (about 30–45 seconds per batch).
Sweeten and stabilize
Transfer the apple purée to a large mixing bowl or keep in the blender. Add the granulated sugar, lemon juice, and the remaining cold water. Stir or blend briefly (10–15 seconds) to dissolve the sugar and distribute the lemon juice. The lemon juice prevents browning and brightens flavor.
Optional warm infusion
If using ground cinnamon for a warm-spiced flavor, warm the mixture gently: pour the purée into a small saucepan and heat over low for 3–4 minutes, stirring constantly, just until the sugar dissolves and the cinnamon releases its aroma. Do not boil. Remove from heat and cool slightly before straining (if straining).

Strain the juice for clarity: place a fine-mesh strainer over a large bowl or pitcher's mouth and pour the apple mixture through. Use the back of a spoon to press the solids and extract as much liquid as possible. For an even clearer juice, line the strainer with a double layer of cheesecloth and allow the juice to drip for 10–15 minutes, then gather the cloth and squeeze gently to extract remaining juice.
Chill and adjust sweetness: taste the juice and add up to 1 additional teaspoon of sugar if you prefer it sweeter, stirring until dissolved. Refrigerate the strained juice for at least 30 minutes or serve immediately over ice cubes.
Serve: Pour the apple juice into glasses over ice if desired. Garnish each glass with a thin apple slice or a sprig of mint. Use the leftover pulp in muffins, apple sauce, or compost.
