Prepare fish
Keep the yellowtail chilled until ready. Using a very sharp slicer or sashimi knife, trim away any bloodline or connective tissue. Slice the yellowtail into thin 1/8"–1/4" (2–6 mm) slices against the grain. Arrange slices in a single layer on a chilled platter, slightly overlapping for presentation (serve approx. 8–10 slices per 0.5 lb).
Lightly sprinkle the fine sea salt over the arranged slices to season. Set aside while you make the sauce (about 2–3 minutes) so salt draws a touch of moisture and enhances flavor.
Chef's Special Sauce
Mix sauce
In a small bowl whisk together soy sauce, lime juice, rice vinegar, mirin, sesame oil, grated ginger, and honey until honey dissolves. Taste and, if desired, add 1/4 tsp fish sauce for depth. Stir in toasted sesame seeds and sliced scallion. The sauce should be balanced salty-acidic with a hint of sweetness and sesame aroma.
If you prefer a slightly thicker glaze, whisk in an additional 1/4 tsp honey or reduce by leaving to sit 5–10 minutes; for a lighter dressing add 1/2 tsp water or more lime.
Assembly & Serve
Spoon or drizzle about 1 teaspoon of the chef's special sauce over each cluster of 2–3 yellowtail slices, or lightly brush the sauce across the fish with a small spoon to coat evenly. Avoid soaking the fish; the sauce is a finishing accent.
Serve immediately as a starter. Provide extra sauce on the side if desired.
